Cooking time: 25 minutes

Difficulty: Easy
Chef's Note

The origins of marinara sauce are that it is the sauce that they made in Naples for the sailors (marinara) when they returned from the sea.

The quality of your marinara sauce will be directly proportional to the quality of the tomatoes you use.

Ingredients
For 6 servings

- 60 ml / 4 Tbsp. extra virgin olive oïl
- 4 cloves of garlic, sliced in half
- 8 italian tomatoes
- salt and pepper
- 3 basil leaves, finely chopped
Method
  1. Cook garlic in olive oil in large sauce pan on medium heat until soft and lightly browned.
  2. Crush the tomatoes and add with their juices.
  3. Add 250 ml water to the tomatoes. Season with salt & pepper to taste.
  4. Bring to a boil, then lower heat to a simmer and cook until thickened - approximately 20 to 25 minutes.
  5. Add chopped basil at very end, stir in and cook for 1 minute more.
