Lightly-Fried Sage Leaves with Cheese (Salvia fritta)

The fried sage leaves can be served as an hors d'oeuvre or as a side dish with roast chicken.

- 20 large Sage leaves
- 10 shavings of Pecorino Romano cheese
- 1 egg beaten with 1 tbsp. milk
- Oil for frying
- A pinch of salt
Method
  1. wash the sage leaves; dry them well on a cloth;
  2. dip each leaf in beaten egg;
  3. place a thin shaving of cheese between two sage leaves; fry until golden; drain on paper towels; salt to taste and serve hot.
