Lemon-Based Cocktails

Ingredients
Ingredients for 1 drink
Morning Glory
- 30 g (1 oz.) fresh lemon juice
- 1 tsp. sugar
- 75 g (2 1/2 oz.) scotch
- 6 drops of Pernod
- 1 egg white
- 2 tsp. heavy cream (35%)
- 150 g (5 oz.) crushed ice
Gin Fizz
- 45 g (1 1/2 oz.) fresh lemon juice
- 90 g (3 oz.) gin
- 1 tsp. sugar
- 60 g (2 oz.) sparkling water
Margarita
- 15 g (1 tbsp.) fresh lemon juice
- 60 g (2 oz.) tequila
- 1 1/2 tsp. sugar
Whisky Sour
- 30 g (1 oz.) fresh lemon juice
- 90 g (3 oz.) blended whisky
- 1 tsp. sugar
Method

Morning Glory
  1. place all the ingredients in a blender;
  2. whir for 10 seconds (or use a cocktail shaker);
  3. pour into a glass.

Gin Fizz

  1. place all the ingredients into a blender;
  2. or place in a shaker with a few ice cubes; shake for a few seconds;
  3. pour into a chilled wine or highball glass.

Silver Fizz

  1. prepare as for the gin fizz;
  2. add a few drops of heavy cream (35%)

Ramos Gin Fizz (New Orleans)

  1. prepare as for the Silver Fizz
  2. increase the quantity of cream to 1 tsp.
  3. add a few drops of orange flower water 

Margarita

  1. place the ingredients in a blender with a few ice cubes; process for a few seconds;
  2. rub a lemon slice over the edge of a wide, stemmed cocktail glass; 
  3. dip the edge in fine salt;
  4. pour in the cocktail.

Spritzer

  1. remove the zest from a lemon in a single spiral;
  2. place in a beer mug with a few ice cubes;
  3. pour in 180 ml (6 oz.) white wine
  4. and 120 ml (12 oz.) sparkling water

Whiskey Sour

  1. place the ingredients in a shaker with a few ice cubes; shake for a few seconds;
  2. pour into a chilled stemmed glass;
  3. garnish with an orange slice and a cherry.
