Green Peppercorn Sauce - with Cream and Brown Stock Recipe

Green peppercorn sauce is a perfect accompaniment to steak or chicken breasts. It has a rich refined flavor.
Ingredients
Ingredients for 4 servings
- 4 tbsp. cognac
- 100 ml (6 tbsp.) cream
- 100 ml (6 tbsp.) demi-glace (reduced brown stock)
- 20 g (4 tsp.) butter
Method
  1. Cook the meat or chicken in the skillet as usual. 
  2. Flambé with cognac. Place the lid on to extinguish the flames. Remove the meat and keep hot.
  3. Add the cream and the reduced brown stock (demi-glace) to the juices in the pan; reduce for 1 minute over high heat. 
  4. Gradually whisk in the cold butter in small pieces. 
  5. Add the drained green peppercorns to the sauce and heat through over a low flame.
