Apricot Ramekins with Almond Sauce

Ingredients
Ingredients for 10 servings
Ramekins
- 250 g (9 oz.) braided Bread
- 125 g (4 oz.) slivered almonds
- 500 g (18 oz.) Apricots
- 200 ml (3/4 cup) cream
- 250 ml (1 cup) milk
- 300 g (1 1/4 cups) eggs
- 2 g (1/2 tsp.) ground cinnamon
- 100 g (1/2 cup) sugar
- 80 g (3 oz.) sultanas
Sauce
- 50 g (2 oz.) ground blanched almonds
- 15 g (2 tbsp.) icing sugar
- 200 g (7 oz.) sour cream
- 50 ml (3 tbsp.) milk
- A few drops of pure almond extract
Method
  1. Cut the bread into 1.5 cm (1/2”) cubes. Toast the almonds.
  2. Pit and quarter the apricots. Combine the ingredients gently and divide among ten individual buttered ramekins.
  3. Bake in a 200° C (400° F) oven for 30 minutes.
  4. Combine all the ingredients for the sauce and serve with the ramekins.
