Ingredients
For 4 servings

- 100 g (3 1/2 oz.) melon
- 8 g (1 1/2 tsp.) sugar
- 60 ml (1/4 cup) Noilly Prat or other dry white vermouth
- 2 Tbsp. water
- a drop of vanilla extract
Method
  1. Place all the ingredients in a small aucepan. Cook for 5 minutes over low heat.
  2. Purée in a blender to form a smooth coulis.
